Green Scallion Sauce
I almost always prefer red chilies but the combination of bitter olive oil and thinly sliced green onions make this dish delightfully bright and refreshing.
Scallion Sauce
6 green onions, sliced
4 garlic cloves, minced
1 inch of ginger, grated
2-6 green thai chills or 1 large jalapeno, minced
1 cup of nuetral oil, I actually prefer the bitterness of olive oil
1/2 -1tsp sea salt salt to taste
The traditional way is to heat up some neutral oil till hot and pour it over the sauce. I actually prefer a good olive oil and mix it throughout, cold. I love being able to taste the bitterness of it. Mix well, and serve with Drunken Chicken or even just a plain rotisserie chicken. I won’t tell.
